Much of the tea you buy as Darjeeling may actually come from Nepal: the two growing regions border each other, share the same Himalayan climate, and even cultivate the same tea plants, which arrived in Ilam in 1863 as a gift from the Chinese Emperor to the Prime Minister of Nepal. And yet, Nepalese tea remains a little-known origin, despite offering a level of quality that rivals its famous neighbour.
In this workshop, we will taste 4 Nepalese teas and learn how to recognise their distinctive character, from muscatel and floral notes to the complexity that makes high-altitude teas so special.
Course programme:
The history of tea in Nepal and its connection with Darjeeling; the main growing regions (Ilam, Dhankuta, Panchthar) and the role of altitude; types of Nepalese tea and seasonal flushes; orthodox tea-processing techniques; guided tasting and aroma analysis; brewing methods.
This course is designed for:
• tea enthusiasts curious to discover a still little-known tea origin
• baristas and food & beverage professionals looking to offer their customers something rare and distinctive
• anyone who has already tasted Darjeeling and would like to discover its Nepalese cousin
No previous experience is required: the course includes a brief introduction to both the world of tea and the world of chocolate, and the entire tasting will be guided by Elisa.
What you will need to take part:
For the tea tasting:
• a kettle or saucepan to heat the water
• a teapot or cup with an infuser
• a small plate on which to place the tea leaves before brewing, for sensory analysis
• bottled or filtered water
• a thermometer to measure the water temperature for the tea, or alternatively a temperature-controlled kettle
What you will receive at home:
• a kit containing 4 loose-leaf teas from Nepal
• a tasting sheet
